The Carotenoid Connection

Carotenoids are a class of plant compound, which the body converts in vitamin A. Since they give the flesh it's distinct variety of hues, the intensity of the flesh color indicates how rich the squash is in these compounds. Clinical trials show that these protect against heart disease and cut the risk of clinical depression in women. In addition, winter squash is also high in vitamin C, potassium, and moderate amounts of folic acid(a vitamin B).
